Famous majorly in Eastern India, Coconut Barfi is a traditional festive sweet. These barfis are prepared by cooking fresh coconut meat scrapings in milk and sugar, until the mixture is reduced to a tasty consistency.

Ingredients
- Fresh coconut, grated – 3 cups
- Sugar – 2 cups
- Milk – ½ cup
- Cream (optional) – 2 tbsp
- Cardamom powder – ¼ tsp
Method
Step 1: Take freshly grated coconut in a deep bottomed vessel.
To grate a coconut, pry the white meat from the brown skin. Take the white pieces of coconut and put them in a food processor and pulse it for 10-15 seconds.
Step 2: Add sugar and milk in the grated coconut.
Step 3: Combine well over medium flame until sugar dissolves completely.
Step 4: Keep stirring continuously for about 10-15 minutes or until the mixture starts to thicken.
Step 5: Add cream and continue to cook over medium flame, stirring continuously to avoid sticking. After 20-25 minutes, the coconut mixture will start to separate from the pan.
Step 6: Cook for another 10-11 minutes or until the mixture starts to hold the shape.
Step 7: Add cardamom powder and combine properly.
